Make your own Fruit Vinegar

Making your own vinegar is pretty easy.

Take the ripe fruit, such as plums or pears - over ripe will answer perfectly well.

Crush it with your hand, and put it into a stone or wooden vessel.

Cover the fruit with water and mix well, then leave it to ferment.

When fermentation begins let it stand for three or four days, stirring twice daily, then strain through a jelly bag.

Put the liquid into a wide mouthed jar, and some muslin, or other airy material, over the top to keep dust and insects out. The more freely the air can get to it the sooner it will turn into vinegar. It is a good plan to put the jar out in the sunshine, on a verandah where it is out of reach of possible rain.

Any soft fruit can be treated in the same way. Sweet fruit like plums and pears need no sugar.

The less water used the richer the vinegar.

Vinegar made in this fashion is so strong that it requires to be diluted with water before using.
