This is such an easy and delicious snack. It cost pennies to make and is super healthy to boot.
Ingredients
1 cup arborial rice 1 tsp turmeric 1 tsp blackpepper 1 tsp rock salt 1 chicken stock cube
cook the above in 2 cups of water. (I bring the water to a boil and then turn off the heat and then leave the rice to soak up all the flavours)
When it is cooled add the following 1 cup shredded cheese 1/2 capsicum 1 onion shredded greens (whatever you have growing in the garden) mushrooms 3 eggs plain flour to help it all bind.
when it is all mixed up take a dessertspoon and cook it in a frypan with some extra virgin olive oil.
these little rissoles don't take very long to cook. turn them when they are brown on the bottom
place them on some paper towel while you are cooking the rest of the rissoles.
